Rainbow Pasta Salad

Ingredients
  • 8 oz fusilli or rotini pasta
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/4 cu1/4 cup chopped fresh basilp ch1/4 cup chopped fresh basilopped fresh basilerry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup chopped fresh parsley
  • 2 table spoon red wine vinegar
  • 1 tea spoon honey
Instructions
  • Cook the pasta according to package instructions. Drain and rinse with cold water until completely cooled.
  • In a large bowl, combine the cooked and cooled pasta, diced bell peppers, cherry tomatoes, cucumber, red onion, basil, and parsley.
  • In a small bowl, whisk together the red wine vinegar and honey.
  • Pour the dressing over the pasta salad and toss gently to coat evenly.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
