Lunch Veggie Fried Rice

Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the frozen mixed vegetables and cook for 2-3 minutes, until starting to soften.
Add the minced garlic and ginger and cook for 1 minute, until fragrant.
Push the vegetables to the side of the pan. Pour the beaten eggs into the empty side and scramble them, breaking them up as they cook.
Once the eggs are partially cooked, mix them into the vegetable mixture.
Add the cooked rice and soy sauce. Stir everything together and cook for 2-3 minutes, allowing the rice to get lightly fried.
Remove from heat and stir in the sesame oil. Season with salt and pepper to taste.
Garnish with the sliced green onions before serving.
