Veggie Pasta with Homemade Tomato Sauce

Ingredients
  • 8 oz (225g) whole wheat pasta
  • 2 cups homemade tomato sauce (made from about 4-5 medium tomatoes, 1 onion, garlic, herbs)
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • Grated Parmesan cheese for topping
Veggie Pasta with Homemade Tomato Sauce
Instructions
  • In a large saucepan, heat 2 tablespoons of olive oil over medium heat.
  • Add 1 diced onion and 3 minced garlic cloves. Sauté for 5 minutes until softened.
  • Stir in 1 (28 oz) can of diced tomatoes, 2 tablespoons of tomato paste, 1 teaspoon of dried oregano, and salt and pepper to taste.
  • Bring the sauce to a simmer and let it cook for 20-25 minutes, stirring occasionally, until thickened.
  • Remove from heat and stir in 1/4 cup of fresh chopped basil.
